Elizabeth Yarnell has been a writer since 1995, but it wasn’t until she awoke blind in one eye from multiple sclerosis that she turned her focus to writing about health and nutrition. Her goal of eating healthier meals turned her into an “accidental inventor” when she received a patent for her unique method of creating one-pot meals that are both nutritious and delicious.
Her first cookbook, self-published in 2005, won multiple awards and sold more than 10,000 copies. The latest edition was released from Random House in January.
Elizabeth holds a bachelor’s degree from Bowdoin College and a master’s in liberal studies from the University of Denver. Now a cooking school instructor and a health coach, she started a blog, Effortless Eating for Healthier Bodies. She has been an instructional designer, tech writer, publicity coach and workshop leader on Web 2.0 on using social media to increase publicity for authors and speakers.
